I prefer to think more in terms of macronutrients (protein, carbs, fat) and and adjusting those based on what a person needs. Your body will tell you a lot by the way you feel, how your weight changes as well as bodyfat percentage. Dieting is definitely not a "one-size-fits-all" equation, even for boxers.

Thats some work to put in. You figure the average human burns 2,000 calories a day without excercise. Your workin hard to get those other 2500 off.
-- Ricky Hatton was jogging (not running) 5 miles / 60 min
-- 2-4 hours at the boxing gym
-- Heavy Strength Training several times per week.
And a lot of the 2800 calories per day came in the form of Protein Shakes and supplements ie it wasn't 2800 calories in burgers.
OH AND
The last 10 lbs. or so was pretty much just dehydration/starvation to make weight. Then pig out after.
