I don't know if there is anything "official" but people have always ran with about $11 million in live gate for that fight. And that sounds about right.

Yeah, that's why largely stadium fights are avoided for big fights. But for Canelo/BJS, putting it at Cowboys stadium was the right call. If you have Canelo vs GGG or another big name, obviously you go to Vegas if possible.

additionally, in vegas they pay YOU to host your fight there. you pay the stadium. the casino pays you. and they make it all back on the tables in 2 nights and get free publicity for months. and if there's a "viral" moment, like a knockout, they get their logo splattered all over the ropes and canvas for eternity as the video circulates.
vegas is the be all end all of boxing. it's the highest concentration of 4 star hotels in the world. there is no more neutral or better suited venue in the world for a big fight.

Canelo draws more attention because he isn't a boring fighter and listens to his fans if he hears boos he steps it up and also his masterful technique skills breaking opponents either boxing or by force when they bring it to him. AJoshua is similar but Fury isn't Fury is a boring fighter even Wilder and A Ruiz and Parker and so many they'll worth watching, only reason I watch Fury is when he's fighting someone interesting

Be interesting to see what a big fight in the new Vegas stadium does gate wise, might be a bit of a win-win, can hold 65K and also cash in on the Vegas premium people seem willing to pay.
Sort of surprised Fury v Wilder 3 isn't in there, would they not be able to fill it? Or would people not pay the tens of thousands for good seats in a stadium like they do in an arena with only 20K capacity?
For people like Canelo and Joshua, who are making basically tens of millions for each fight from broadcasters, you'd leave a couple million on the table to fight in front of 70 to 90K people, those are the things that endure and become legend, just ask Carl Froch.
